So, here's the recipe that everyone is just begging and pleading for. Okay, maybe just Mom Barnhart has asked for it, but here it is anyway! Try it out!
Cheesy Corn & Potato Chowder
2 cups peeled and diced potatoes
1/2 cup diced carrots
1/2 cup diced celery
1.4 cup chopped onion
1 tsp. salt
1/4 cup butter
2 cups milk
1/2 cup all-purpose flour
2 (15 ounce) cans whole kernel corn, drained
2 1/2 cups shredded Cheddar cheese
Place potatoes, carrots, celery, onion and salt in a large pot with water to cover. Bring to a boil, reduce heat and simmer 20 minutes. Meanwhile, combine butter, milk and flour in a small saucepan over medium-low heat. Stir constantly until smooth and thick. Pour milk mixture into cooked vegetables. Stir in corn and cheese until cheese is melted. Serve.
The recipe suggested serving in bread bowls. I'll have to try that next time! It would be great since it's thick enough to not soak through the bread too quickly! Yum!
Well, I hope you try that out! It was soo quick and easy! (Make sure you cut up the veggies into consistent sized pieces; and that you cook the flour/milk mixture until it is THICK - I almost undercooked it, but then I realized that it would be added to all the water you cooked the veggies in, so it has to be pretty thick to not get watery!)
